What’s On Your Plate Blog Challenge – GreetingsNotStale* Edition

This month I am trying to recreate a dish I was treated to several months ago, by my co-host Donna’s husband, Richard.

I enjoyed this meal so much and have been thinking about it ever since. I knew I had to try to make it again for myself. I give you HelloFresh’s Black Bean Taquitos, lovingly made by Richard:

I had to forage for the ingredients from my own pantry and refrigerator, so here is what I came up with:

I sauteed the chopped veggies (onion, garlic, yellow and red peppers) in a pan with some oil. Then added the drained and rinsed canned black beans. I found a packet of almost expired taco seasoning mix in the cupboard and tossed that in too, along with a can of Rotel brand canned tomatoes and chilis.
Putting the mixture on the tortillas and adding the cheese. I didn’t have Monterey Jack on hand, so made do with extra-sharp cheddar instead.
Ready to go in the oven.
Done! I loved how the shells got crispy at the ends.
A little salsa, a little sour cream, a wedge of lime…ready to dig in!
A delicious, hearty lunch. Definitely not as pretty as Richard’s, but every bit as tasty. Even after noshing on these for most of a week, I’m already planning to make this recipe again. I’m thinking these could also work individually frozen (before OR after going into the oven), and then to finish/reheat in the air fryer.

    1. YES! In cooking if not in life, let’s be more spirit of the law, and less letter of the law. OK, so this got me into trouble more than once in the workplace (sorry not sorry, HR), but it also got me some great results…as with this recipe. Thanks, Janine 💕

    1. I am loving black beans in this recipe!!! I recently remade it with the addition of ground meat (for my son-in-law) and I really much prefer the meatless version! Thanks, Debs 💕

  3. I had to look up the difference between But here’s the difference an enchilada and a taquito (which I had never heard of). I’m with you on the use what’s at hand type of cooking.

      1. Apparently, the enchiladas is covered in sauce and baked while the taquito is deep fried. But as you said, it’s the taste that matters.

    Love me some taquitos but have never tried to make them myself. A new kitchen favorite is peanut spinach soup. There are various recipes online; I think I would add some chickpeas, diced red peppers. Those recipes are just a suggestion. I realize that my creativity shines in the kitchen.

  5. I firmly believe that “best by” and expiration dates are merely suggestions.

    The black bean poblano flautas were one of our favorite HelloFresh recipes and we continue to make them for ourselves now that we are no longer subscribing. Your version looks marvelous and very yummy.

    1. I agree! If it’s not fuzzy, slimy, bubbling, or curdling and still smells like what it’s supposed to, it’s still good. (And I used to be a food microbiologist.) Thanks, Janis 💕

  7. This looks delicious and I think I have all of the ingredients (except the tortilla) in the pantry. I’ll remember to check to date on the taco seasoning to make sure it is ‘almost expired’ as I am sure that is the secret ingredient.

  8. Deb, this looks really good! I’m giggling at your recipe making as it’s a lot like mine: Well, I don’t have this, but I DO have this….constantly making changes, but the base is always there.
    I make something like this, but add chicken (for the carnivore in the house) and I use a jar of salsa verde as we love that green sauce. Now I’m hungry!

  9. Yummy … I think I want me some as well! I noticed how you sneaked in mention of your airfyer towards the end …

    Re “almost expired” seasoning: in the world of food rescue, I imagine your dry seasoning would be a “use by” or “best by” date, which really is just a suggestion.

    1. I agree – best before dates are just a suggestion. With any foods, I like to use my senses to determine freshness, not a date set by some food manufacturer. Things can also go off before the date, as well as still be good afterwards. Thanks, Ju-Lyn 💕

  10. I think of what you put together here more of a concept, than a recipe. I cook like this all the time. Get me started with an idea, then I’ll fill in details as I go. Your meal looks delicious, btw.

    Hi Deb – Richard’s obviously set your tastebuds alight … and they look very tasty and I can smell and feel the crispy shells with the mouth tingling filling! I’ve always loved bread and that sort of thing – but avoid them when I can as to a point I’m easier without them. Cheers Hilary
