What’s On Your Plate Blog Challenge – Feeding a Crowd Edition

I came across a recipe last month that I think is perfect for this month of celebrating, potlucks, and hosting a crowd. It’s pretty easy to make (and make ahead!), can be made vegetarian easily, is gluten-free, is a HUGE amount of food, and tastes even better the next day! What’s not to love?!

Without further ado, I give you:

Riso al Forno recipe

I made this recipe AS IS (I know…who am I?!?!) for the first go-round but I am already planning to make it again with more and different vegetables added in…and maybe (spoiler alert!) cut the recipe in half next time 😉.

Assembled casseroles!!! If you watch the video, you will see that he makes ONE dish out of all the ingredients. I had so much food prepared, I needed to use a second casserole dish for the overflow!!! (Not a bad problem to have if you have the freezer/fridge space, though!) Sadly, Robert Plant the Fridge (he’s my tall cool one 😎) could not accommodate all this bounty so off to my daughter’s I went with it.

    1. The anchovy in the sauce is like the white wine in risotto. You can’t really taste it but if it’s not there, the dish is definitely missing something you can’t quite put your finger on. Thanks, Rivergirl 💕

  1. Deb, this looks like cold weather comfort food to me. A few weeks ago, Malcolm made an eggplant lazagna that grew well beyond the dish also. We had it three times in one week. So good.

    Cute video. I love that he called himself out on using the metal spoon and the kid taste-testing was priceless.

  2. Did you use the anchovies? I wonder if it would work with orzo? I would definitely add more veggies like mushrooms and zucchini but I might skip the peas.

    1. I couldn’t get anchovies at the grocery store but I did find and use anchovy paste (basically the same thing). Yes to the mushrooms and zucchini. I don’t know why it wouldn’t work with orzo or any smallish pasta. Thanks, Bernie 💕

  3. Fabulous looking dish, Deb. I loved the video too. The first thing I noticed was that the cook’s shirt kinda matches his living room chair. Yup, that’s exactly how my mind thinks! The second thing that I noticed (and he then commented on) was the shape of the meat. I don’t spend much time in meat departments or butcher shops but I have never, ever seen meat shaped that way.
    Awesome post. I will definitely be trying this dish in the future — and his ratatouille.

    Ha, I seem to recognise the pan holding the meat sauce. It’s not too hard to recognise Dutch heritage in a kitchen. 😉
