What’s On Your Plate Blog Challenge – Donna-Approved Edition

Donna came over to my house last month (surprise, surprise), one of several visits actually. I forget why or what we were doing this particular time but I don’t forget what I made for lunch! Or was it supper?! 🤣

My daughter had served me this meal previously, and I not only thought it delicious but perfect for my mostly-vegetarian friend and co-host. Here is the recipe: Instant-Pot Mujadara.

I would describe this lentil and rice dish as comfort food that is easy to prepare, and quite healthy (as opposed to most comfort foods 😉). I think you could spice it up easily, if you wanted. For my first time making it (don’t you love how I make my guests my guinea pigs?), I made and served it exactly as the recipe stated. I don’t know who I am anymore either. I made it the day before so there would be less time in the kitchen and more Donna-time.

My favourite brand of brown rice, measured out and ready for the rice cooker.
Sauteing the onions for almost 30 minutes. I stopped at about 21 minutes as I was afraid they would start to burn. Also, I was damn sick of hovering over the pot and constantly stirring.

Finished dish – ready to go in the fridge, for heating and serving the next day.
Plated with yogurt, lemon, and salad. Fresh herbs from my garden top the salad, and the mint leaves came from there too!
Donna approves of this meal. She even had seconds!

    I came across this delicious Mexican-style corn salsa from the June ’23 Canadian Living magazine, great for the hot dogs cooked over a campfire at the lake last w/e.
    2 c corn, browned in a dry skillet
    1/3 c mayonnaise
    1/4 c crumbled feta cheese
    1/4 c chopped fresh cilantro
    juice of 1/2 lime
    1 tsp chili powder
    1/2 tsp smoked paprika.
    pepper
    This was my find for the month. Your meal looks delicious probably more so shared with a friend.

  2. I tried making lentil soup once decades ago and the lentils didn’t cook. I never figured out what went wrong, and haven’t tried making anything with lentils since!
    I do really like them in Indian cuisine and eat them when dining in restaurants. Think I should be brave and try again? Any ideas on why my one try didn’t work out?

    1. I don’t really know, Deborah. I find lentils to be one of the easiest pulses to cook. Maybe they were really old? Start with red lentils…they cook up (and mostly dissolve) in soups in no time! Thanks 💕

    1. That’s the thing, isn’t it – with all of these kitchen gadgets! I will always make room for an electric pressure cooker like the InstaPot though – I find them very handy. Thanks, Janis 💕

    1. It is! When I worked in a lab, we had these magnetic stir bars that you plopped into your solution and they just spun around and kept things stirring on the hot plate while you did other things. When is the home version coming out, I am still wondering?! Thanks, Marty 💕
