What’s On Your Plate Blog Challenge – Truffle Fries Edition

My love for my air fryer is still going strong. It is a rare day that I do not use this thing to reheat, broil, roast or air fry something. I know (I think, anyways) that I have mentioned on Ye Olde Blogge that I am not a lover of the french fried potato most days. If we are out to eat and you see me ordering a side of fries or a plate of poutine please keep your digits away from my face because clearly I am hungry enough to bite your hands off. That is the only time that fries have any appeal for me now that I am done with PMS forever. Well, that was BTF (Before Truffle Fries)…

On Valentine’s Day of this year, my WOYPBC co-host and I decided to try a new restaurant for lunch (Galentine’s Lunch, we unoriginally called it). So after a very brisk and windy walk along the shore, we headed to the newly opened Fern and Cedar Brewing Company in Qualicum Beach, to fill our bellies.

Obligatory selfie. Little did I know I was about to develop a new obsession discover a new favourite food in just a few short moments…

You know what? I can’t even remember what I ordered. But what I do remember is that Donna ordered truffle fries, and when they came to the table I was immediately taken in by the glorious aroma of her dish. And it didn’t take much coaxing from my table mate for me to try a few of her fries.

Cue the choir of angels. Wow. What have I been missing all of these years?!?!

Little did Donna know she was going to have to keep her eyes on those fries! Thank you Donna, for sending me this picture. Now I remember what I had – some delicious chowder and a very forgettable piece of bannock.

Even though I had had this complete food revelation mid-February, I kinda forgot about the truffle fries (I know, I can’t believe it either) until a few weeks after I got the air fryer. At that point I googled “air fryer truffle fries” and came up with this recipe. It seemed simple enough except I didn’t have any truffle oil. After coming up empty-handed at the local grocery stores, I ordered some from Amazon as one does these days. The first time I made the fries I was less than wowed. So I re-read the recipe and saw that, as an option, one could add truffle salt to the finished fries. Back to Amazon I went. And that, my friends, made all the difference in the world…my world, anyways!

Soaking the sliced russet potatoes in cold water for 30 minutes.
Assembling the other ingredients: freshly grated Parmesan, truffle oil and truffle salt.
Drying the soaked potatoes carefully and thoroughly in a clean tea towel.
Finished air fryer truffle fries.
Even more delicious dipped in a little mayo. I’m Dutch. Don’t judge.
I would hazard a guess that one could skip the truffle oil altogether and just use this salt on the fries. I haven’t tried it though…

Life ATF (After Truffle Fries)…sigh… I will never be the same again. 😉

  1. They look delicious Deb and I’m glad to hear you are still enjoying your air fryer. My daughter swears by hers too! I’ve joined in with a trying not to eat what’s on my plate post 🙂

    1. They look really good. I’ve not tried an air fryer. Do they use less oil? I have very fond memories of Qualicum Beach from my backpacking days, which was rather a long time ago now!

  3. I admitted truffle fries but have never tried them in an air fryer. My monster toaster oven has that feature but I’ve only used it once. As for the mayo dipping I must be Dutch, I do that too!

As strange as it may sound, I’m a new convert to the joys of the lowly potato … but it must be a russet … and while I decided the air fryer wasn’t for me, fries from the oven are a new obsession. I would happily share a plate of fries with you – with sour cream or mayo on the side. But I’ll pass on the truffle oil or salt. All the more for you 🙂

  5. Life ATF sounds like it might be a letdown. I like the taste of truffles, but have never had the oil on anything. I can happily eat any French Fry with any condiment that might be handy so I probably would love these fries, too.

  6. That was such a fun Galentine’s Excursion – despite the incredibly wet and windy weather. Ironically, I’m not usually a french fry person either – but the ones at Fern and Cedar were divine. I am super excited to try your air fryer version. Yup, that’s a definite, unsubtle hint. Thanks for the fun post! 😀

    The chef here made truffle fries in an air fryer recently so I know exactly what you mean about how different they are from normal fries. Never too old to find a new favorite food.

  8. Unlike you, I have a hard time passing on fried potatoes; white or sweet ones, I love them all.
    Truffle fries are ahhmmazing and yours are a thing of beauty.
    I never knew you were supposed to soak them in water for 30 minutes first…that is a first for me, but NOTED!

    1. I never knew this either, Suz. I grew up watching my mother and grandmother put peeled potatoes in a pot of water until they wanted to cook them (in fresh water, with some salt). I just figured they were doing that to keep the potatoes from browning until they were ready for them. Little did I know there was another reason! Thank you 💕

    Yum & yum. I have yet to use the truffle salt I was gifted last fall. I think it’s time. What’s on my plate? Zesty shrimp & pasta from an old Kraft What’s Cooking magazine (Spring 2008). I pull them out seasonally and leaf through them for menu inspiration. There are Easter themed sugar cookies – chicks, bunnies, carrots – cooling on the counter waiting to be frosted. Want to trade cookies for truffle fries?

    1. As yummy as your cookies sound, I’ll stick with my truffle fries…they are that good! Your shrimp and pasta sounds delicious. I used to love picking up those little brochures at the grocery store or finding them as a pull out in a magazine. I wonder if they still produce them. Thank you 💕

  10. I am a big fan of most things potato (except for that terrible Canadian concoction poutine… what is your country thinking?). I’m not sure that I’ve ever had truffle fries but they sound fabulous. I’ll share my limoncello with you (my WOYP?) if you’ll make some truffle fires for me. Deal?

    1. Poutine is supposed to be the perfect hangover or end-of-a-night-of pubbing food. There is something similar in Holland, called kapsalon. I wrote a blog post about it once. Lots of fat, salt and carbs for whatever ails ya 🤣. Only appeals to me when I should’ve eaten hours ago. You bring the limoncello and I’ll whip up a plate of truffle fries…it would be great to sit down with you and Paul again – thanks, Janis 💕

  11. Can’t say’s I’ve ever had anything truffly, so couldn’t hazard a guess whether I’d like or dislike. I’d be game for a taste… That said, I still have no interest in owning an air fryer, but ain’t sayin’ “never” neither. 😁

    1. It’s a very specific and complex flavour that is hard to describe…but I love it. Hah, I believe I have said “never” about an air fryer plenty of times 🤣. Look at me now! Thanks, Del 💕

    Yum! I have truffle oil on hand, but not truffle salt. Hmm, wondering if maybe sea salt might work?

    I just made panko avocado fries using my air fryer. So delicious! I made tacos with them, but they are also fab left as fries, and eaten dipped into a cumin aioli.

    1. I found I needed the truffle salt to give my fries the same flavour I experienced with the restaurant version. Avocado fries? Sounds great. Unfortunately I can’t tolerate much avocado – it makes my stomach very queasy. Very jealous of those who can scarf it down…LOL! Thank you, Tamara 💕

  13. I’ve resisted an air fryer but now I want one because truffle fries! And you make your own fries. Very cool.

  14. Hi Deb, the recipe sounds very impressive when you mention truffles! My husband bought and air fryer but I only use it to make salmon and fries – I need to try to fall in love with it as you have with yours. Thanks for the recipe and for encouraging me to use my air fryer!

  16. After following your truffle fries journey and viewing these delicious images, I am thinking I need to try making some in my air-fryer too (I am so not a fan of deep-frying anything over the stovetop; and I’m not a huge fan of oven-fries).

    My issue with truffle fries in restaurants is that sometimes they use truffle oil that tastes (and smells) synthetic. Making them at home means one can eliminate that problem.

    Thank you for the linked recipe – this means I won’t have to wing it and hope it turns out!
