Knock, Knock. Who’s there? Air Fryer. Air Fryer, who?
Knock, Knock. Who’s there?! Air Fryer. Air Fryer, who?!?
Knock, knock. Who’s there?!?!? Orange. Orange who?????
Orange you glad it’s not another Air Fryer post? But it does involve potatoes, again…LOL!
This month what’s on my plate is such a delicious, easy recipe first introduced to me by my darling daughter: The Primal Gourmet’s Greek Potatoes.
The first stage is to dress the peeled spuds with olive oil and spices, and the chopped garlic. Then plop them in the oven for 20 minutes.
Then remove from the oven and pour over the chicken broth/tomato paste mixture before returning to the oven for the next 20 minutes of roasting time.
Time to add the last, vital ingredient:
And here is what they look like, when the roasting is done.
These potatoes are absolutely delicious. And, if you’re lucky enough to have leftovers, they make a sublime fried potato…I think I would make extra next time, just so as to have plenty more some on hand for the next day.
Ironically, I never took an actual photo of said potatoes ON MY PLATE. I promise to do better next month!
Please let my co-host Donna or myself know what’s on your plate at your house, in the Comments section of either of our WOYPBC posts (or both, if you are so inclined!). Please check out Donna’s May post, here where she lets her pictures do the talking on a fabulous curry dish.
Oh, and here’s the Link party button if you’re so inclined (🤞 it works for me again!).
Rock on,
The WB
I love potatoes – these look good will add my post to the link party tomorrow.
You won’t be disappointed if you give this recipe a whirl, I predict! Thank you 💕
Just copied this recipe. Sounds perfect!
I hope you love it as much as I do, Rivergirl. Thanks 💕
I am always looking for a new take on potatoes. This one sounds delicious.
It truly is, Suzanne! Thanks 💕
I never met a potato I didn’t like.
They’re not my favourite source of starch…which is why I think it’s kinda weird that I’ve posted a potato recipe 2 months in a row now. Maybe I just needed to up my “potato game”? Thanks, Kate 💕
They look so yummy! Potatoes are my weakness no matter how they are fixed.
They look so yummy! Potatoes are my weakness.
Sorry, Jean! Your comment went to spam for some reason. Thank you 💕
Love potatoes. Plan to use this recipe. WOYP – scalloped potatoes accompanied the brisket dinner with neighbors last week; pickle soup; tomato chickpea chard simmer over rice, then pasta; hot dogs; butternut/pumpkin soup; BLT sandwiches. Today I’ll prep baked beans to take to my son’s house.
It all sounds delicious and/or intriguing to me, Mona! Pickle soup?!? Tell me more 😁. Thank you 💕
Check out the Polish pickle soup recipe on The Spruce Eats website. It’s basically a potato soup with diced pickles and brine to up the flavor. More potatoes!
Will do! Thanks 💕
Looking good Deb.

Hi Deb – what a fun sounding recipe … I must try … and I guess good when they’re still warm to add to a salad type meal … delicious – cheers Hilary
Oooohhhh! That is a brilliant idea. A warm potato salad made with these beauties? Yes, please. Thanks, Hilary 💕
My kind of recipe! Easy and with Greek flavors. I think we have all the ingredients here, except the potatoes. THAT could be a problem…
Indeed! Hope you can get some potatoes in-house soon. Thanks, Ally 💕

These sound and look delicious!
They truly are, Janet. Thanks 💕
I think I love potatoes more than any food!! Always make me feel so grounded, full and so delicious and versatile. This is an interesting way of cooking them. I love how they seem to absorb all that broth, or it gets roasted away, but I am sure these are very yummy. Also, well adding lemon to things is my number one strategy for good food. I squeeze lemon in soups and on everything. Here in Mozambique chicken peri peri is made with a ton of lemon juice, which gives it such a lovely acidity.
Thanks for sharing this.
Peta
YES to anything with lemon!!! I make a killer (if I do say so myself🤭) lemon chicken and rice soup. I ate so many potatoes as a kid, I got bored with them…we were a meat and potatoes family, growing up. Spaghetti night was so exotic, to me 🤣. Recipes like this (and truffle fries!) are reigniting a love for potatoes. Thanks, Peta 💕
