Way back in April, I had an entirely different post planned out for the May “What’s On Your Plate Blog Challenge”. Last week however, it dawned on me that this month’s challenge falls on Cinco de Mayo (click on link to see what May 5 is all about and how to celebrate), so I decided my initial idea could keep. This month I am bringing you a Mexican-themed dish instead.
I was hoping to make it something to do with tacos….I do love me some tacos. I even ordered a tortilla press, so I could make my own from scratch (and gluten-free). However, it was not to be as my tortilla press did not come in on time. Es muy malo!
Instead, let me bring you my version of a deconstructed burrito…aka a burrito bowl.
It all started with a pork shoulder that had been taking up valuable freezer real estate for far too long, and now needed to be turned into something, STAT. When I bought it, I had been thinking of pulled pork but that obviously hadn’t happened. I came across this recipe, for carnitas…and with that, I was off to the races.
I wanted to make some of those tasty pickled onions to go with it, and that led me to this recipe. (And you better believe I will return to it for the Barbacoa 😉 ).
And lastly, I had to find a recipe for Cilantro Lime Rice (my fave!). Here it is, and it turned out wonderfully. This is how it all came together on the plate:
Thanks so much to everyone who enjoyed and/or participated in last month’s inaugural blog challenge! My, that was fun! Hope you had as much fun as Donna and I did. Check out Donna’s post for this month, here!
As with last month, please let us know what’s on your plate at your house, in the Comments of either Donna’s or my post. And remember if you decide to blog or Facebook or Instagram about it, to use the tag #whatsonyourplateblogchallenge so we can find you out on ye olde interwebbs!
Rock on, and ¡Salud!
The WB
That looks yum! And your privacy screen looks like it will work a treat.
I’m just off the back of A to Z, so haven’t thought about recipe posts, but hopefully next month I’ll get something on my blog. With nothing better to talk about, the menu for tonight’s dinner is porcupines with mashed spud, broccoli and carrot. Not exciting but very loved in this house 🙂
Congratulations on completing another A-Z, AJ! 💕 Your dinner sounds just delicious to me.
The privacy screen has an added bonus of cutting severely down on the pollen and tree debris that gets blown onto my balcony floor and furnishings. I wasn’t anticipating that, and it’s a lovely surprise!
What a lovely plating. And your balcony looks very inviting… I’d love to pull up a margarita and join you.
😳
You would be most welcome to, Rivergirl! Thank you 💕
Hi Deb, next time I make taco bowls I’ll try that pickled onion recipe. The plate looks great on your new patio. Must be a nice place to sit and enjoy a cool breeze.
Yes, please do! It’s delicious. I have some leftover pickling solution and I think I will shred some carrots into it. I’m quite fond of my little outdoor space. Thanks, Suzanne 💕
Looks very good, except for the sour cream. Yech! To me, it’s sacrilege to put sour cream on Mexican food. I can almost taste those carnitas, though. My mouth is watering.
Happy Cinco de Mayo!
Oh, is it not a Mexican thing – this addition of sour cream? It seems to be something that is added a lot to nachos etc., here in the Great White North. I am used to it, and quite like it. But we are far from Mexico and things can get lost in translation 🤣. Carnitas are not my preferred protein, I have discovered in making this dish. I would prefer fish, then steak. Then chicken, and lastly carnitas. But I am eating up the leftovers and they are still good. Thanks, TG 💕
It’s a matter of preference I guess. I’ll bet there are a lot of Mexicans who like sour cream. But I’ll bet there are a lot who don’t, just like this gringo doesn’t. What I don’t like is when Mexican restaurants automatically put it in a burrito or other Mexican dish, without asking. That’s the sacrilege I’m referring to.
Ah, OK. Here it is often served on the side, in a little dish…along with salsa and guacamole. Or you have to request it when your burrito is being put together.
That’s the best way, in my view. This method could help prevent another Mexican Revolution.
Viva la revolution! 🌮😄
Looks very good! Love the balcony!
Thank you, Kate 💕
Love the spirit you put into these challenges. Food looks great, the deck is fabulous.
Thank you, Jean 💕 It keeps me from living on a diet of potato chips for supper 🤣.
Oh rats! It’s not been my best week down here, with daily dire warnings of horrid t-storms, hail, etc. I shall gaze longingly at your delicious Cinco de Mayo meal and try to come up with something for next month. Enjoy your lovely balcony space and cool/cold weather! 💕
Thank you, Del 💕 I hope your weather improves!
Me, too!
Oh now I might have to do two posts!! That looks so mummy I might just make that for supper tonight.
Love your balcony space but your hammock seems like a clear win to me.
I had no idea that hammocks were so amazing. If only I could string one up on my balcony….🤔 Thanks, Bernie 💕
Now having seen Donna’s post I am betting the hammock is theirs!
It’s actually mine. They liked mine so much I picked up the same one for them on my way to their campsite for breakfast the next day. 😄
That’s too funny!
I was going to comment on your privacy screen! That is a great idea. Did you come up with that yourself or did you buy it that way?
That meal looks delicious! Happy Cinco de Mayo!
Thank you, Kari 💕 I did not McGyver the privacy screen (although I probably could have😁)…it came like that.
I am picturing you McGyvering a privacy screen and it is making my day.
Happy Cinco de Mayo, Deb. You plate looks delicious and your balcony looks inviting.
Leslie xoxo
Thank you very much, Leslie 💕 Happy Cinco de Mayo to you too!
What a great way to celebrate today. Your food looks delicious and your balcony looks lovely. Happy Cinco de Mayo!
Thank you very much, Ally 💕 Same to you! 🌮
Yes to all of the above … including the Corona, with lime of course!! It’s a good substitution when margaritas aren’t available 🙂
The balcony looks great, especially with the privacy screen!
Thanks, Joanne 💕 Happily, I had picked up some limes en route to the camp as Donna couldn’t source any when she got the beer. My girl guide training is the gift that keeps on giving…I try to always “be prepared”! 😄🍻
That dish is so up my alley, that IT could be named after me. I love this type of food so much that I can dream of it. I’ve found that if you put pickled onions on anything, it instantly adds some jazz!
Your balcony looks so inviting and I wish I could send you some of our warmth. (93*today!)
Happy Cinco!
Thank you Suz 💕 I never dreamed it would be so easy to make those onions, and you are right – they do jazz everything up! Happy Cinco de Mayo to you too!
That dish looks absolutely delicious, Deb. I vote for it to be part of one of our campsite meals. I’ll take an extra helping of sourcream if there is any leftover! 😀
Thank you, Donna 💕. I would definitely make the cilantro lime rice and the onions again (and again, and again 😁). But maybe not the carnitas. I’d prefer fish or steak, I think.
Your balcony looks so cozy! Glad you enjoyed your food. 😀
Thank you, Akilah 💕
YUM!
Yes, indeedy! Thank you, Sarah 💕
Salut! Dinner looks yummy and your patio looks so inviting and cozy.
Thank you, Deborah 💕
You’re welcome, Deb! 😀
That looks yum. I do love slow-cooked pull apart pork. And burrito bowls are a weeknight fave here in Chez Tracey. I too was planning a completely different post for this episode but the photos were just way too bad for posting. Anyways, here’s my offering for the table. https://brookfordkitchendiaries.wordpress.com/2021/05/05/bun-cha-2/
Thank you, Jo 💕 It’s a fabulous offering….loooove Vietnamese food!
Looks incredible and almost too pretty to eat. Thanks for the post and the fun.
Thank you, Antoinette for commenting and joining in! 💕
What a great way to mark Cinco de Mayo! In about 1 1/2 hours, we’ll be celebrating CdM with a group of neighbors at one of our Covid driveway parties. Margaritas are on the menu, along with chips and dip. Not interesting enough for a What’s On Your Plate post, but yummy anyway.
I love, love your balcony. You’ve managed to turn a fairly small area into a welcoming oasis. Yay you!
Thank you, Janis 💕 Enjoy your driveway party!!!
Hi Deb, this looks great and when we visited Banff a couple of years ago we tried some Mexican bowls which we enjoyed. I’ve not made any since returning home but your recipe looks delicious. Thanks for inspiring me to take part in sharing my recipes and also for the #whatsonyourplateblogchallenge.
Thank you, Sue 💕 for joining us in the fun! I’m going to be making your soup soon I think.
An excellent post, Deb! Creative how you wrapped it around Cinco de Mayo. A deconstructed burrito is right up my ally – room for error.😜 You remind me how some of the extra spices make a big difference. The appearance of the plate is a work of art!
Rathtrevor is a great park. I would love to plan a camping trip there when the restrictions lift. ❤️
Thank you, Erica 💕 You are right about the room for error! I need and appreciate it, in my kitchen 🤣. It would be great to meet up with you and Chuck again someday. Soon!
That looks delicious Deb. I’m a huge fan of “deconstructed” — which, for some reason the Big T refers to as “unfinished.”
“Unfinished” 🤣. Good one, Big T! Thanks, Su 💕
I felt like I was reading my latest Bon Appetite magazine. Well done!
Oh, thank you Tracey 💕 That’s pretty high praise!!!
Hi Deb – it looks so tasty … and I now look forward to Tacos with you … while your balcony looks a delightful restful, secluded place – the ‘screen’ works really well … congratulations – and it is warming up very slowly this year for us over here. Cheers Hilary
Thank you, Hilary 💕 After a brief period of summery weather in April, it has returned to cooler temps now here in May. I shouldn’t be impatient for better weather…but I am. 🤷♀️
What a Cindo de Mayo from scratch celebration you delved into like a Culinary Jedi, I bow down, I just took the Fam to a Restaurant. That’s the only way my Plate was gonna look THAT good. *winks* Your Deck looks inviting… a Cold One waiting there on it… all the more inviting.
Ooops, typo, sorry, Cinco de Mayo… it’s early what can I say?
😁
Thank you, Bohemian!💕 Our restaurants are take-out only at the moment…that pandemic thing, ya know? Nice that you got to actually dine-in somewhere!
I used to have a pressure cooker, but it seems to have disappeared in the last move. I’m definitely going to try that recipe for pickled red onions, though.
Jude
Oh you should! It’s a winner! Thanks, Jude 💕
carnitas look delish! and your space is darling also!
Thank you, Pam 💕
Looks very delicious! Well done. That’s a dish that we can enjoy quite easily here on the coast of Oaxaca… 🙂 Yup fish tacos last night. Love your comfy and colorful cushions. We also just pimped up our outdoor sitting area.
Thank you, Peta and/or Ben 💕 Not sure who is commenting or if it is both of you 😁. I saw your outside space and it looks absolutely serene and welcoming!
https://equipoiselife.wordpress.com/2021/05/09/rolled-onto-the-plate/
Those spring rolls look delicious, Bernie!
Thanks for joining in 💕
Deb, that looks positively yummy, and I’m going to have to nudge Himself to have a try of that pickling 🙂
The balcony looks wonderful – a great space for enjoying a margarita or three – Cheers!
Thank you, Deb 💕 Yes, please do try those pickled onions! Easy and tasty 😋
I love your spruced up balcony hang out! It’s very inviting & chill.
And that burrito bowl … I am wanting me some now! I do love deconstructed burritos and tacos – less challenging to eat (I am not very coordinated with keeping the roll/taco together and most of it falls on my plate anyway!)
Thank you, Ju-Lyn 💕
