What’s On Your Plate Blog Challenge – Not Potatoes, AGAIN?! Edition

Knock, knock. Who’s there?!?!? Orange. Orange who?????

Orange you glad it’s not another Air Fryer post? But it does involve potatoes, again…LOL!

This month what’s on my plate is such a delicious, easy recipe first introduced to me by my darling daughter: The Primal Gourmet’s Greek Potatoes.

You also need olive oil, which I forgot to pull out of the cupboard for this photo. Ronny’s recipe calls for EVOO, but I find regular olive oil is much better for cooking with. Leave the EVOO for bread dipping and salads…

The first stage is to dress the peeled spuds with olive oil and spices, and the chopped garlic. Then plop them in the oven for 20 minutes.

Then remove from the oven and pour over the chicken broth/tomato paste mixture before returning to the oven for the next 20 minutes of roasting time.

It’s starting to smell pretty awesome around here.

Time to add the last, vital ingredient:

Fresh lemon juice!

And here is what they look like, when the roasting is done.

These potatoes are absolutely delicious. And, if you’re lucky enough to have leftovers, they make a sublime fried potato…I think I would make extra next time, just so as to have plenty more some on hand for the next day.

Ironically, I never took an actual photo of said potatoes ON MY PLATE. I promise to do better next month!

    Love potatoes. Plan to use this recipe. WOYP – scalloped potatoes accompanied the brisket dinner with neighbors last week; pickle soup; tomato chickpea chard simmer over rice, then pasta; hot dogs; butternut/pumpkin soup; BLT sandwiches. Today I’ll prep baked beans to take to my son’s house.

        Check out the Polish pickle soup recipe on The Spruce Eats website. It’s basically a potato soup with diced pickles and brine to up the flavor. More potatoes!

  6. I think I love potatoes more than any food!! Always make me feel so grounded, full and so delicious and versatile. This is an interesting way of cooking them. I love how they seem to absorb all that broth, or it gets roasted away, but I am sure these are very yummy. Also, well adding lemon to things is my number one strategy for good food. I squeeze lemon in soups and on everything. Here in Mozambique chicken peri peri is made with a ton of lemon juice, which gives it such a lovely acidity.

    1. YES to anything with lemon!!! I make a killer (if I do say so myself🤭) lemon chicken and rice soup. I ate so many potatoes as a kid, I got bored with them…we were a meat and potatoes family, growing up. Spaghetti night was so exotic, to me 🤣. Recipes like this (and truffle fries!) are reigniting a love for potatoes. Thanks, Peta 💕
