What’s On Your Plate Blog Challenge – Cinco de Mayo Edition

Way back in April, I had an entirely different post planned out for the May “What’s On Your Plate Blog Challenge”. Last week however, it dawned on me that this month’s challenge falls on Cinco de Mayo (click on link to see what May 5 is all about and how to celebrate), so I decided my initial idea could keep. This month I am bringing you a Mexican-themed dish instead.

I was hoping to make it something to do with tacos….I do love me some tacos. I even ordered a tortilla press, so I could make my own from scratch (and gluten-free). However, it was not to be as my tortilla press did not come in on time. Es muy malo!

Instead, let me bring you my version of a deconstructed burrito…aka a burrito bowl.

It all started with a pork shoulder that had been taking up valuable freezer real estate for far too long, and now needed to be turned into something, STAT. When I bought it, I had been thinking of pulled pork but that obviously hadn’t happened. I came across this recipe, for carnitas…and with that, I was off to the races.

I wanted to make some of those tasty pickled onions to go with it, and that led me to this recipe. (And you better believe I will return to it for the Barbacoa 😉 ).

Well worth the walk to The Bulk Barn to pick up coriander seed and whole allspice, to make these pickled red onions.

And lastly, I had to find a recipe for Cilantro Lime Rice (my fave!). Here it is, and it turned out wonderfully. This is how it all came together on the plate:

Alas, no frosty margarita to accompany it, only a glass of white wine. This dish was delicious!
You may have noticed in the above photos that my balcony spruce-up for 2021 is now complete. My privacy screen is now up.
And my comfier cushions arrived too! Now all we need is a few more degrees of heat for optimal balcony enjoyment to commence. In the meantime, I just grab a sweater and a comforter. And splash hot sauce all over my burrito bowl. 🙂

    That looks yum! And your privacy screen looks like it will work a treat.

    I’m just off the back of A to Z, so haven’t thought about recipe posts, but hopefully next month I’ll get something on my blog. With nothing better to talk about, the menu for tonight’s dinner is porcupines with mashed spud, broccoli and carrot. Not exciting but very loved in this house 🙂

      The privacy screen has an added bonus of cutting severely down on the pollen and tree debris that gets blown onto my balcony floor and furnishings. I wasn’t anticipating that, and it’s a lovely surprise!

  2. Looks very good, except for the sour cream. Yech! To me, it’s sacrilege to put sour cream on Mexican food. I can almost taste those carnitas, though. My mouth is watering.

    1. Oh, is it not a Mexican thing – this addition of sour cream? It seems to be something that is added a lot to nachos etc., here in the Great White North. I am used to it, and quite like it. But we are far from Mexico and things can get lost in translation 🤣. Carnitas are not my preferred protein, I have discovered in making this dish. I would prefer fish, then steak. Then chicken, and lastly carnitas. But I am eating up the leftovers and they are still good. Thanks, TG 💕

      1. It’s a matter of preference I guess. I’ll bet there are a lot of Mexicans who like sour cream. But I’ll bet there are a lot who don’t, just like this gringo doesn’t. What I don’t like is when Mexican restaurants automatically put it in a burrito or other Mexican dish, without asking. That’s the sacrilege I’m referring to.

        1. Ah, OK. Here it is often served on the side, in a little dish…along with salsa and guacamole. Or you have to request it when your burrito is being put together.

  4. Oh rats! It’s not been my best week down here, with daily dire warnings of horrid t-storms, hail, etc. I shall gaze longingly at your delicious Cinco de Mayo meal and try to come up with something for next month. Enjoy your lovely balcony space and cool/cold weather! 💕

  7. Yes to all of the above … including the Corona, with lime of course!! It’s a good substitution when margaritas aren’t available 🙂

  8. That dish is so up my alley, that IT could be named after me. I love this type of food so much that I can dream of it. I’ve found that if you put pickled onions on anything, it instantly adds some jazz!

  9. What a great way to mark Cinco de Mayo! In about 1 1/2 hours, we’ll be celebrating CdM with a group of neighbors at one of our Covid driveway parties. Margaritas are on the menu, along with chips and dip. Not interesting enough for a What’s On Your Plate post, but yummy anyway.

    I love, love your balcony. You’ve managed to turn a fairly small area into a welcoming oasis. Yay you!

  11. An excellent post, Deb! Creative how you wrapped it around Cinco de Mayo. A deconstructed burrito is right up my ally – room for error.😜 You remind me how some of the extra spices make a big difference. The appearance of the plate is a work of art!

    And that burrito bowl … I am wanting me some now! I do love deconstructed burritos and tacos – less challenging to eat (I am not very coordinated with keeping the roll/taco together and most of it falls on my plate anyway!)
